So what's your opinion? Should we keep this feature or should we suppose that most people don't care at all and, at least, can manually remove the persistence file from within another OS?

Yes this is exactly what you're thinking! The purpose is to let people the possibility to remove persistence, ie. delete the persistence file, which is impossible to do if the file is in use. However:

1) very few people are concerned by this feature - I hope
2) the tool to remove persistence doesn't exist yet!

So this boot menu entry is of very little interest right now…

Just a thought
If I enabled persistence mode and then restart I see a screen with 2 nice red doudou's which asks me in which mode DDL should start. If I select Without persistence does it mean I cannot read data saved during the previous session?
It looks a bit illogically...
