I'd love to do that; what's stopped me is that I can't see how it can be done with standard Gtk progress-bar widgets. We'd need a custom widget (or just a simple canvas).

First the progress bar for how much of a unit is build could show more information. The already build part could be left in a solid color and the amount gained next turn shown in a light color or half transparent.

Secondly when a city has multiple build slots the city window displays the progress of building units with a single bar. Instead it could split the bar into x rows, one per slot, and show how much of each slot is filled (will be filled).
