Could you have one page with a graphs showing:
1) total number number of users since beginning.
(graph showing how the total number of users grew over time)

2) total number of projects since beginning.
(graph showing how the total number of projects grew)

Those graphs would make easy to see how many new users/projects were added within a given interval.

The page with graphs could be updated once a month/week and be served just as a static page (to prevent load on database).
