It turns out it is possible by clicking on a fine print text at the bottom of "display criteria".

A weird place to hide such a useful control, isn't it ?

Hi,

You need to create your own "query form", where you can select exactly which fields are displayed and/or can be used as sort criteria :)

A project admin has to create it though.

If it's already possible I couldn't find a way to do that.
It seems the problem is in the fact that the priority field doesn't have its own column so you can't click on it to make the view sort on it...
